Vegetarian Christmas

I'm terrible at not weighing/measuring anything but just mixing an array of ingredients! For vegetarians at Xmas: Chestnuts Choice of nuts Fresh cranberries Oats or breadcrumbs (optional) Carrots Parsnips Puff pastry (optional) Roughly chop chestnuts & nuts and mix  in cranberries .... Use a little oats or breadcrumbs to bulk out if needed! Add small diced carrots & parsnips... For quicker cooking these can be pre cooked until soft but bitey!  Mix together... This should bind without an egg making it suitable for vegans! Tip into loaf tin & into oven .... About gas 5 & around 30 mins to finish cooking the veg & soften the cranberries. When cooked it may turn out to slice but is fine being spooned onto plate! The same mix can also be placed in rolled out puff pastry & sealed to make a Chestnut Wellington! Accompany with usual veg but cook potatoes in oil not fat etc Pigs in blankets can be achieved using vegetarian bacon wrapped round vegetarian ssusages..... Cook in separate dish to meat ones!  Happy Christmas x
